I might as well eat. Since the last cold front I been wanting a good gumbo so I figured today would be a good day to put some of my sausage and andouille to good use. Got the smoked meat and veggies to a boil while I made my roux. Just hit the roux with onions, garlic and celery, best smell in the world. Just added the roux to the pot and will boil it hard for a while before adding the deboned chicken. Guess I will make a potato salad while I wait, man I am making myself hungry.
